1 cup self-raising flour
90g soft butter
1tsp vanilla essence
1/2 cup caster sugar
2 tbsp milk
1 cup blueberries (I used frozen)
1. Combine flour, butter, vanilla essence, sugar, eggs and milk.
2. Beat with electric mixer until combined.
2. Gently fold in blueberries.
3. Place in muffins trays and bake for 20mins at 180C
I love this recipe because it's quick and easy.
I mix it by all just by stirring as Jasmin is scared of the electric beater! It works just fine.
Also my girls prefer mini-muffins so we just cook them for less time. It makes 24 mini muffins so I'm making double the amount next time so there's some leftover to freeze.
